Freeze dried candy tastes sweeter and richer than the original, as it's more concentrated due to the removal of water in the freeze-drying process. Depending on candy type, it may puff up or “explode” or remain close to original size.
Texture is the biggest difference between regular and freeze dried candy. What was sticky and chewy is now crunchy and sometimes melts in your mouth! What was hard is now airy!
